Joining before graduation rules out EB2 categorization when filing for PERM?

I am a graduate student in Electrical Engineering at USC. I am graduating in May 2014 and I have a full time offer. I have only 1 credit/unit left for Spring Sem and I would like to do a coop. My full time employer is not ready to let me join before graduation. They feel it will affect my job categorization when I file for PERM. The recruiting managers tell me that the categorization might fall into EB3 rather than EB2 if i JOIN BEFORE GRADUATION.

I wanted to know if there is a work around for this.

Thanks.
